Alfredo fettuccine Pasta.

Freshly made fettuccine pasta
Freshly made fettuccine pasta

Ingredients:


Servings: 1 - 2 people


  • 125g Dry fettuccine pasta

  • 2 tbsp unsalted butter

  • 2 clove garlic, minced

  • 3/4 cup heavy cream

  • 1 cup grated parmesan( i use pecorino calcagno pepato, absolutely love it)

  • Dried/Fresh parsley leaves for garnish


Method:


  • Melt the butter over medium heat.

  • Add minced garlic and sauté until fragrant not brown.

  • Pour in the cream. Let it gently simmer for two minutes ( stirring occasionally).

  • Gradually add in the grated cheese, whisk until melted completely ( the sauce now should look creamy).

  • Season with salt and pepper ( if your using pecorino calcagno pepato you can skip adding pepper)

  • Toss in the cooked pasta, stir to coat it evenly

  • Garnish with parsley and additional cheese if desired.


Additional notes:


For the fresh pasta i used:


  • 1 1/2 cups all purpose flour

  • 2 large eggs


Which makes two servings of fettuccine.
